History of World Food Day :

1945, the United Nations Food and Agriculture Organisation (FAO) was established. In 1979, 34 years later, the FAO Conference officially recognized World Food Day as a worldwide holiday. After that, over 150 countries accepted World Food Day as an essential celebration day.

Significance of World Food Day 2023 :

This year’s theme for World Food Day is Water is Life; Water is Food. No one should be left behind. Water is vital to life on Earth. Water is essential to life on Earth.

It covers most of the Earth’s surface. It makes up more than 50% of our body, provides our Food and sustains our livelihoods. This precious resource isn’t infinite; we should stop taking it for granted. Water is affected by what we eat and how it’s produced.

We can be the change by taking water action together,” wrote Food and Agriculture Organisations of the United States on their official website. This day is a time when organizations join together to promote the importance of having equal access to water and Food for all people on Earth.

What can you do to celebrate World Food Day in 2023?

Food is essential for everyone. Therefore, it is vital to celebrate Food Day from both sides. This day is celebrated and widely recognized by many international organizations that address hunger and food issues, including the World Food Programme and the World Health Organization.

Here are some recipes you can cook at home to celebrate the day:

1. Green bean dumpling

Ingredients:

  • French beans- 350gm
  • Preserved vegetables- 160gm
  • Salt- 15gm
  • Pepper- 7gm
  • Sesame Oil- 20ml
  • Sugar- 25gm
  • Potato starch- 25gm
  • Ginger- 15gm
  • Garlic- 15gm
  • Wheat flour 60gm
  • Green onion- 30gm

Method:

  • To make the dumpling dough, we must take a bowl and add 100 ml of boiling water, wheat flour, and potato starch. Knead until soft, then rest covered for 5 minutes.
  • Add the vegetables, seasoning and oil to a wok and sauté until light brown. Then add the ginger and garlic and toss.
  • Add the cold vegetables to the dough and roll it into small pieces.
  • Form the dumplings and steam them in a steamer for five minutes.
  • Serve with sauces and a little oil.

2. Achari Mushroom Cannelloni

Ingredients:

  • A dozen lasagne sheets
  • Sliced mushrooms weighing up to 300g
  • Grated courgettes weighing 300g
  • 25g of butter
  • Extra virgin olive oil, one tablespoon plus some for drizzling
  • Baby spinach roughly chopped, weighing 150g
  • Fresh mint roughly chopped into one tablespoon
  • Ricotta drained, weighing 200g
  • Nutmeg is a pinch
  • Grated zest from one lemon
  • Roquefort Cheese, 150g
  • Large egg yolks from free-range eggs
  • Double cream 100ml
  • To garnish, chop tomatoes (2) with seeds removed

Method:

  • Cook the mushrooms and courgettes for 5 minutes in a pan with butter and olive oils. Add the spinach and the mint to the mixture, season it well and transfer the mixture to a colander.
  • In a large bowl, whisk ricotta with nutmeg to a smooth consistency. Add lemon zest and season to taste. Then, gently mix it into the mushroom mixture.
  • Roll each sheet tightly after placing the filling on the short edge. Place the cannelloni, seam-side down, in a rectangular ovenproof or buttered dish.
  • Pour the glaze and mix the cream, cheese, and egg yolk in a food mixer (or by hand) to a smooth consistency. Spread the glaze over the cannelloni evenly and place in the refrigerator for 30 minutes.
  • Preheat the oven to 180degC or 160degC if using a fan oven. The cannelloni should be baked for 8 minutes to be heated through. Place them under the preheated grill and cook for two more minutes or until golden and bubbling. To serve, toss tomatoes lightly with extra virgin olive oil before scattering them on top.

3. Subz Sikampuri Kebab

Ingredients:

  • Mix Vegetables: 1 cup roughly chopped and parboiled mixed vegetables (Carrots, Cauliflower, French Beans, Yam Bottle Gourd)
  • 3/4 cup Boiled, Peeled and Mashed Potatoes
  • Sunflower oil refined to 1 tsp.
  • Half a cup of thinly sliced onions
  • 1 Tbsp of Ghee
  • 1 Tsp Cumin Seeds (Jeera)
  • 1 tsp ginger-green chilli paste
  • 1/4 Tsp Turmeric Powder Haldi
  • 1 Tsp. Yellow Chilli Powder
  • 1 Tsp Red Chilli Powder
  • Garam Masala Powder – 1/2 Tsp
  • Salt To Taste
  • 2 Tbsp. Finely chopped coriander (Dhania).
  • Amul Cheese, 1/4 cup grated
  • A Pinch Of Cardamom (Elaichi) Powder
  • Enjoy the taste of freshly ground black peppercorns (Kalimirch).
  • Oil for Greasing and cooking

Method:

  • Heat the oil in a large nonstick skillet, add the onion, and cook on low flame for about 5 to 7 mins, or until they turn light brown. Keep aside.
  • Mix the potatoes and mixed vegetables in a blender and blend until a coarse consistency is achieved. Keep aside.
  • Add the cumin seeds to the ghee and heat it in a large nonstick pan.
  • Add the turmeric powder, chilli pepper powder, and salt when the seeds crackle. Stir continuously as you cook on medium heat for 2 to 3 mins.
  • Add the coriander and continue to cook for another minute on medium heat.
  • Allow the mixture to cool down completely and remove from the flame.
  • Add the browned onions and combine well.
  • Divide the mixture evenly into ten portions. Shape each portion into a 3-inch round and stuff each one with grated processed cheddar.
  • Heat a nonstick tava and lightly grease with oil or ghee.
  • Use a small amount of oil/ghee to cook each kebab until it turns golden brown on both sides.
